Gluten Free Pumpkin Chai Cookies With Chocolate Chips

 The cookies are irresistibly delouses and super good for your!

 Here’s The Recipe:

Ingredients:

One can organic pumpkin pure

2 large eggs (or 3 small ones)

2 cups of chocolate chips (or more if you like)

1 1/2 cups pecans or walnuts (optional)

3 cups flour (preferably one cup coconut flour, one cup Almond flour, and one cup all purpose gluten free flour or rice or tapioca flour)

1/3 cup melted coconut oil (or butter)

Sweetener of your choice (try 1/4 cup maple syrup, 1/4 cup honey or agave and 1/2 cup coconut sugar or brown sugar. You can use a few drops of stevia instead of sugar if you would like to keep it sugar free)

2 tablespoons Greek yogurt (optional)

One teaspoon Baking powder

Dash of Vanilla

Dash of Salt

1 1/2 tablespoons of Jessica’s caffeine free chai tea powder mix

Directions:

Pre heat oven to 350

Mix the pumpkin, eggs, warm coconut oil (or butter), vanilla, yogurt and sweeteners in one bowl

Mix the flours, salt, backing powder, and chai spices in another bowl

Gradually add the dry ingredients to the wet ingredients

Add nuts and chocolate chips

Taste it! Make it sweeter or spicier if you like! Or dump a few extra chocolate chips in.

The mix should be of the consistency of fluffy cookie dough.  If it’s too liquid add more flower, if it’s too dry add yogurt or coconut milk.

Grease a pan with butter or coconut oil.

Make dough balls in your hand and put them on the pan (squish them down if you want them to be flatter)

Bake for 15-20 minutes

Devour!!!
